Cardamom and Banana 3-Ingredient Pancakes

I do love the aromatic flavour of a cardamom pod, there’s something quite fabulous about its faintly aniseed essence.  Well, until you accidentally bite into one in your pilau rice and the bitterness is overwhelming, but that’s beside the point.  I find the cardamom seeds give these insanely easy, coeliac-friendly pancakes a deliciously botanic undertone.  As these take less than 5 minutes to make, there really is no excuse for not uplevelling your breakfast game tomorrow.


  • 2 Cardamom pods
  • 1 Banana
  • 2 Eggs


  1. Mash your banana in a bowl until mushy, and add in two whisked eggs.

  2. Grind up the insides of two cardamom pods and add to the mix.
  3. Heat a frying pan to medium-high.  Might be worth greasing the pan but THAT DOESN’T COUNT AS AN INGREDIENT.

  4. Fry for a minute or two on each side until firm and browned.

Serve with your favourite accompaniment – lemon and sugar, maple syrup, chocolate sauce, fresh fruit and powdered sugar.  Whatever, these are your pancakes now.
