Peanut, Sweet Potato and Lime Soup


Peanuts are one of those brilliantly versatile ingredients which seems just as at home in a dessert as it does in a savoury dish.  They’re salty, punchy and full of protein and oils making them a brilliant backbone for this soup.  While the peanuts bring the flavour, the sweet potatoes offer a robust backing that – when blended – brings a smooth texture and heartiness.  The limes, of course, round it off with their perfectly sweet acidity in a way that brings it all back to Earth.  This is definitely one to serve to any friends who proclaim they could never envision themselves eating a vegan meal, I really do defy them to find anything lacking here.

The dish is, of course, inspired by flavours used commonly in South-East Asia and it truly is an incredibly satisfying soup – I even ended up serving some of the leftovers atop some sticky rice and the experience was truly incredible.  You can, of course, adapt the heat and the the extent of the peanut flavour to your own tastes – the beauty of soups like this is you can continue to taste and adjust right up until the end.

Ingredients – For 4 medium sized portions

  • 1 large sweet potato
  • 1 Large carrot
  • 1 brown onion
  • 3-4 tbsp unsweetened peanut butter
  • 1-2 fresh limes
  • Vegetable Stock cube
  • 2 handfuls roasted, salted peanuts
  • 2-3 tsp chilli powder
  • chilli flakes (for garnish)
  • Fresh parsley (for garnish)


  • Peel and cube your sweet potato and carrots – roughly 2cm cubes should suffice.  Place in a large saucepan with the sliced onion and approx 750ml boiling water and cook with the lid on until fully soft and tender (around 15-20 minutes).  A small sharp knife should effortlessly be able to go through them.
  • Either allow to cool slightly and add to a large blender, or use a stick blender and blend until smooth and no more chunks remain.  Be sure to do this in the water they cooked in, as it will have absorbed plenty of flavour and nutrients.
  • With the soup back in the large pan, add the stock cube and peanut butter.  Stir and taste after each spoonful to ensure you get it to your own liking.  You may even want to add more.  Add the chilli powder, again stirring and tasting after each spoonful.
  • Finely chop the peanuts and stir most of them through, saving some to sprinkle on top.
  • Squeeze in the juice of 1-2 limes (again, stir and taste as you go) along with their zests.  If the soup is too thin at this stage, allow it to simmer until it is at the desired thickness.  Taste and adjust the seasoning, then you are ready to serve!

Sprinkle with some chopped peanuts, chilli flakes and a sprig of parsley to serve.
